It cannot know what you never wrote down
Every menu-side AI is only as good as the menu data behind it. If your allergen tags are incomplete, an AI waiter's honest answer is “I don't know, please ask your server” — which is correct, and still not the answer the guest wanted. The work is in the data.
It does not fix a slow kitchen
AI removes question load and phone load. It does not shorten ticket times, and no serving robot has ever made a pass run faster. If your bottleneck is the kitchen, buy kitchen capacity.
Severe allergies still need a human
A menu-grounded assistant should hand off, not improvise, when an allergy is severe. Treat any vendor whose demo confidently answers a life-threatening allergy question without deferring to staff as a liability, not a feature.

Start where there's no hardware
The menu is the only place AI can go live in an evening: no install, no floor re-plan, no POS project. Publish a QR menu with an AI waiter attached and you have real guest questions by the end of service.

Read what guests actually asked
The first week of questions is the most useful restaurant research you'll get for free. It shows the dietary demand you're not serving, the dishes nobody understands, and the gaps in your own menu descriptions.

Once you know whether your constraint is information or logistics, you can tell whether a serving robot or voice AI is worth the capital. Most operators discover the constraint was information.
