You decide how customer data is kept and handled. These controls live under Settings → Privacy.
What you can control

Deleting an organization is permanent
Deleting the organization removes its menus, conversations, and settings for good. tamr asks you to confirm carefully before it happens.
FAQ
How long are conversations kept by default?
Until your retention window removes them. Set the window under Settings, Privacy to match your policy.
Can I stop the waiter from remembering customers?
Yes. Turn off customer memory, and the waiter treats every visit as new.
How do I export everything before I leave?
Use the data export under Settings, Privacy, then delete the organization if you no longer need it.
